Ingredients for the meat balls:
300g chicken minced meat • 100 baked chicken or turkey breast • 10g pistachios • Chicken herbs • 1 mandarin
Ingredients for the dipping sauce:
100g cranberries • 50g maple syrup • 1 lime and zest
Preheat the oven to 180 degrees.
In the mean time crush the pistachios to fine crumbs-like resemblance and mix them with the chicken herbs.
Chop the baked chicken/turkey breast into small pieces.
Proceed the same with the mandarin.
Mix the chicken minced meat with the herb-pistachio mixture, add the chopped turkey and mandarin pieces.
Divide into 10 parts and roll into balls.
Line a baking dish with parchment paper and place meatballs on it.
Bake for 20 minutes.
Remove from the parchment paper and serve 2-3 per person alongside the dipping sauce.
In a saucepan bring the cranberries, with maple syrup and juice and zest of one lime, to boil and continue boiling for 5 mins on medium heat.
